Such a great tasting Olive oil! I love frying my eggplant in it, it gives the eggplant an absolutely spectacular flavor! & ready for that simple little eggplant dish of layered crushed tomatoes, oregano, fresh mozzarella, grated Romano, & fresh basil leaves, heated or unheated its a crowd pleaser. :)
