Riscossa is the brand of pasta that Nonna Romana  sold in her Bottega in Italy starting in 1945.  Riscossa pasta is produced in Corato (about 20 miles away from our hometown Mola di Bari, Puglia) and is the brand of pasta that all Pugliesi love. I'm happy to continue Nonna Romana's tradition of making this pasta available in my Bottega.

I ordered the tubettini pastina as its hard to find in my area. Usually can only find ditalini. The tubettini was for a recipe called pasta fagioli. Deanna Martin published the recipe for her famous father who was a singer. Although it's a per se pasta dish; I call it Dean Martin's soup.

My Granddaughter and Great Grandson was visiting and I served them the Tubettini pasta in soup and they both loved it so much they ate all of it. So when they returned home to Raleigh, NC I surprised them and ordered 4 packages of Tubettini, which they just received and were so excited. It is the very best pasta ever.

One of the best!

This is the perfect size for a pasta snack or pasta Fagioli soup. I send a few bags a lot to my daughter in college as she has to make microwave pasta a lot and loves this shape!

Perfect Size Bean Soup Pasta

This is the perfect size pasta for a small white bean soup. Sometimes the Ditalini are a bit too big. It's also a great little addition to a lentil or split pea soup.

It keeps it's texture al dente, even when reheating some of the leftover soups.

This will remain as a regular staple in my pantry!
