Mafaldine - Pasta Riccia by Riscossa from Puglia

Riscossa is the brand of pasta that Nonna Romana  sold in her Bottega in Italy starting in 1945.  Riscossa pasta is produced in Corato (about 20 miles away from our hometown Mola di Bari, Puglia) and is the brand of pasta that all Pugliesi love. I'm happy to continue Nonna Romana's tradition of making this pasta available in my Bottega.

Fun shape and cooks up so nicely!

I bought this on a whim because I like the name (family member has the name Mafalda) and the shape appealed to me. LOVE the way it cooks up and it really holds the sauce too. It's our new favorite. Have ordered it twice, and this will become a pantry staple for us.

Perfect Mafaldine

I make Pasta San Giuseppe more than just on March 19th. I've been buying a Mafalde pasta at an excellent Italian Market. They have a lot of great Italian pastas but the brand of Mafaldine they stock doesn't hold together properly. The strands split down the middle or break up when tossing with the crumbs. Divella's Mafaldine 81 is perfect in every way. I see Divella is right down the road, west of Mola Di Bari. Excellent.

Mafalde are not easy to find where we live now in NC. They are an old favorite of mine. I was very happy to see them. I like to make them with a marinara sauce and cannelini beans, the way my father liked them. Thank you!

I cannot eat pasta made in America because it upsets my stomach. I can however, eat this pasta as it is made in Italy. It is awesome ad for some reason I especially love this shape. Don't hesitate to try it.

the pasta was amazing i cant find mafalde here and i love to use it to make "stove top" lasagna quick and easy .... i love this made with a chicken "gravy" too ... sauce gravy whatever you call it .. i use chicken instead of my usual meatballs, sausage, etc. and add onions, and that forms a delicious gravy over this pasta i think i bought 4 bags and im down to 1 !!! I wish Nonna's could get some papardelle too thats another favorite that i cant find in stores here !!!
