Smoked Caciocavallo is an intriguing cheese haling from the south of Italy. It is typically produced in a characteristic gourd shape that is perfect for hanging and display. The interior packs a punch of flavor very similar to provolone in taste and a bit spicy which increases with age. After production it is smoked to add to it an added dimension in flavor.
