Riscossa is the brand of pasta that Nonna Romana  sold in her Bottega in Italy starting in 1945.  Riscossa pasta is produced in Corato (about 20 miles away from our hometown Mola di Bari, Puglia) and is the brand of pasta that all Pugliesi love. I'm happy to continue Nonna Romana's tradition of making this pasta available in my Bottega.

Riscossa's Penne Zite Rigate is Regale in the way is looks on our plates served with my favorite ragu's as well as our "piggy meatballs" (my grandchildren call them that) because they are quite large pork and beef meatballs, and they fill up your pasta dish!! We love this pasta, and this too has become a regular staple in our pantries!!!
