Organic Raw Chestnut Honey by Apicoltura

Obtained only from flowering organic chestnut trees, this dark, slightly bitter, very complex honey is prized by chefs for savory applications.  This Organic raw honey has a dark color and an intense flavor with a slightly bitter aftertaste. As would be expected from a premium Italian condiment, it is excellent for pairing with aged meats, and cheeses such as Robiola and Pecorino.

ADI Apicoltura uses Nomadic Cultivation - moving the hives from region to region to find the best organic meadows and fields.   This honey was produced in Abruzzo - Lombardia – Piemonte.

I use it in my special salad dressing and on pork tenderloin with jam. Great flavor. Not as bitter as implied but adds a nice balance. Sometimes I drizzle on ricotta when I use it on toasted Italian bread. Nice quick appetizer.
