Fileja Calabresi with Cipolla Rossa di Tropea by Soldano


Fileja is a very typical Calabrian pasta of ancient origin. This pasta actually has different names in different parts of Calabria. However, traditionally, it is made by wrapping a strip of  pasta dough around a ferretto (a thin metal rod) or around a thin wooden stick.

This particular version of Fileja is even more spacial as it it made with 100% Italian durum wheat and red Onions of Tropea (IGP). Known around the world for their distinct color and flavor.
